Much fat, especially certain oils, are essential for good nutrition. Olive oil is valuable. All other oils are allowed, with the best canola, nuts, soy, grape seed, sesame, sunflower, Safflower oil, especially if they are "cold or expeller pressed. Nonfat cooking oils such as corn, soy and sunflower oil, at high temperatures or to allow brown or smoke.

The butter is allowed. Margarine should be avoided, not because of the levels of sugar, but because they are generally transfat (hydrogenated oil), which make up a serious threat to health. (Some margarines are not hardened in the natural foods stores).

Do not remove skin and fat, meat or poultry. Salmon and other fish with cold water are an excellent source of Omega-3-fatty acids.
